Most individuals select a glass based on their visual appeal. Surprisingly, this is also based on a functional aspect.

For the past decade, the coupe and Nick & Nora have been enjoying a comeback in craft bars, and it’s not nostalgia that’s making it happen. The broad, shallow bowl of a coupe glass directs the nose directly to the drink as you sip it, which helps concentrate the volatiles to the olfactory system before the liquid even gets there. The smaller, more contained bowl of the Nick & Nora glass, on the other hand, keeps the temperature more effectively since there’s little to no warming air at room temperature. This isn’t a coincidence in design – it’s been going on for centuries.

How you hold the drink is also affected by the silhouette of the glassware. A stemmed glass keeps your hot hands away from the bowl, which is essential for cold, spirit-forward cocktails in which the texture changes perceptibly with a degree of temperature. The highball encourages the glass to stay on the table between sips, which slows the drink and changes the pace of the entire drinking experience.

Selecting the wrong glass won’t just be aesthetically unpleasing, it will ruin everything you’ve put in it.

The engineering of clear ice

Regular ice from your freezer looks cloudy or opaque because the water freezes from all sides in. Cloudiness is caused by impurities in the water and air that get trapped in the ice, while the still collapsing structure of standard ice cubes shunts streams of meltwater to your glass.

Clear ice freezes from one side, and it should freeze from the top down. As the ice forms, the impurities are pushed down and out of the way. Directional freezing blocks off all but the top side of the water, forcing the ice to form outward from the coldest part of the freezer. As the freezer gets colder, more impurities like air and dust are pushed away from the forming ice.

The result is ice that is cleaner and clearer, and also denser. A clean clear ice cube will melt much slower than an equal size cube of standard ice. With clear ice, the difference in taste between your first sip and your last is minimal.

Clear ice also acts like a lens. Light passes through it and bends, which makes the liquid surrounding it appear more saturated and brilliant under bar lighting. A deep amber whiskey looks richer. A blue-tinted cocktail looks electric. The ice itself becomes a visual amplifier for whatever color the drink carries.

Color theory and liquid chemistry

Color is the first thing a cocktail communicates to a customer. Before the delicate interplay of smell and taste, before the symbolism of texture or temperature, a person sees the hue of a liquid in a glass, processes it, and starts making assumptions about sugar, strength, dominant flavor…

A conceit for the color wheel is an oddly rarefied idea in this context: that combinations of hues should be chosen and composed with intention to deliver a specific effect. But analog colors that sit next to each other on the wheel reinforce each other and feel pleasant and safe. Complementary colors, those opposite on the wheel, are unbalanced and harsh and thus feel exciting and bold. Split-complementary are the compromise, feeling balanced while still having some pop.

Monochromatic is simple: ingredients (garnish, foam, liquid) all within the same color family. This popular contemporary build feels ultra-modern and considered, and tends to intentionally maximize color’s immediate impact while minimizing its role through complexity of flavor construction.

With all that in mind, would you ever intentionally choose any of those natural colorants? Blue Curaçao practically telegraphs its citrus sweet/sourness with that inescapably sharp-sea-blue color. Fresh pressed pomegranate and hibiscus juice can give deep red/magenta tones without the use of any artificial additives. Activated charcoal at large enough doses simply visually dials your drink black.

By far the most interesting of these is the butterfly pea flower, a real multitasker. Steep it and it’s bright indigo – but add citrus right on top of it and it shifts to vivid violet and through to pink. Anthocyanin pH-sensitivity is the chemical, hot colorplay is the result.

Balancing intense color with a composed, non-cloying palate teaches you exactly where sweetness and visual impact can coexist without either overpowering the other.

Using foam as an artistic canvas

A nice frothy head gives the mouthfeel bonus of a light barrier preceding the liquid, and gives you a canvas to play with. Both simple proteins like egg white and aquafaba work by denaturation. You vigorously add air while you shake, and the proteins unfold, form an interstitial bubble-trap among the liquid, and then hold their shape. This should stay stable at room temp for a few minutes.

Egg white is the classic texture enhancer, with the added bonus of some animal fat on the outer coat of the protein to lend creaminess. Aquafaba – the liquid from canned chickpeas – promises most of the same sensations without the animal bits. It might be slightly less rich, but plenty of people swear it has no negative impact. Experiment with both.

Dry shake that foam first. You want to rattle the proteins for a good bit before you start chilling, and many people skip this step. Denaturation is apparently slower when it’s really cold, so you’re trying to build as much volume as you can, as quickly as you can. Give that shaker a solid minute without the ice.

That’s it, once your foam is in the glass you can go to town. Angostura bitters art is the simplest entry point: a few dots on the foam, a toothpick drawn through them in the other direction to make a feathered heart or arrow head. Takes ten seconds, knocks their socks off. Little flowers are good, they hold position better when pressed gently against the foam and give you a bright dash of color. Stencils work very well too – you just hold them close above the foam and sprinkle some activated charcoal over the top before lifting them off to reveal a dark silhouette.

Functional vs. decorative garnishes

There is a clear difference between a garnish that actually contributes to the experience and one that is just there.

For example, expressing citrus oils over a poured drink by pinching a wide strip of zest directly over the top sends microscopic aromatic compounds onto the drink’s surface and into your nose as you bring the glass to your lips. This serves to re-awaken the palate and introduce the spirit before it even touches your tongue. This is a functional garnish. It alters the experience of consuming the drink in a quantifiable manner.

Meanwhile, a plastic cocktail sword with an electric pink cherry speared on the end does not. It contributes unnecessary weight and color to the drink, implies “festive occasion” but does nothing for flavor, scent, or texture. If visual presentation is genuinely about enhancing the drinking experience, then garnishes should be doing some work.

Dehydrated citrus wheels dance on that line. Visually, they’re pretty sleek and modern; the process of dehydration makes the color more vivid than fresh slices. While they sit in the warm liquid, they begin to release a citrus scent into the drink. It’s minimal and clean. Tiny green leaves like micro basil or whole, tiny sprigs of fresh thyme add scent without adding a lot of particles to the drink. Smoked garnishes are currently very popular for good reason – an aromatic, smoked sprig of rosemary can be passed over the top of a cold, wet drink and create an incredible smell that puts the brain in a place of anticipation of warmth and flavor.

The physics of density and layering

Layered cocktails are based on the principle that liquids of different densities will float on top of each other.

Specific gravity is simply a measure of the density of a given liquid relative to water. The less dense your liquid is, the higher it will float in a glass.

Sugary syrups and most liqueurs are high-specific gravity liquids and therefore sink. Since they are frequently the sweetest and most flavorful of your components, it makes sense that they form the base of your drink. Lower-specific gravity spirits and juices float merrily on the surface where you can enjoy their eye-appeal as much as their taste.

To make a layered cocktail, you simply add each ingredient separated by specific gravity in the correct order, slowly pouring the next one over the back of a bar spoon to disperse it gently across the surface. Doing otherwise would lead to a blended cocktail, which is something completely different.

Your final drink shows off the different colors of each ingredient to create a pleasing and aesthetically technical presentation. It looks like the sort of high bar magic that only professionals can manage. But the fact is, get your measurements right, and the physics do most of the work for you.

As the number of sold, identifiable, consistently presented drinks increases, so does the free advertising.

For the home bartender, the math is different but the concept applies just the same. A drink that looks as good as it tastes is going to be more satisfying to your guests and to yourself. And that’s nothing to sneeze at.
