The Traditional Balsamic Vinegar of Modena is a distinctive and typical vinegar whose production and use is established by an ancient historical tradition. It is mainly home made or produced on small scale in the Modena Province of Italy. It is made exclusively from a single ingredient: grape must cooked in open vats and matured by a long vinegarization process through natural fermentation, followed by progressive concentration by ageing in a series of casks of different wood. The grape used for the Traditional Balsamic Vinegar of Modena come from the Modena province exclusively, according to the local tradition: mainly Trebbiano, Lambrusco, Spergola, Berzemino and other typical varieties, with no additives. The whole production of Traditional Balsamic Vinegar of Modena must follow the relative Production Regulation (15/05/2000) and must be bottled in a distinctive round bottle with rectangular base, sealed and numbered. Famous and highly prized product all over the world, the Traditional Balsamic Vinegar of Modena was granted PDO (Protected Denomination of Origin) status by European Community on 17/04/2000.
